  • 1 cup Greek yogurt (full-fat recommended)
  • 2 tbsp extra virgin olive oil
  • Juice of 2 lemons (about 1/4 cup)
  • 4 garlic cloves (minced)
  • 4 pitas (soft and fluffy)
  • 1 cup diced tomatoes
  • 1 cup diced cucumbers
  • 1/2 cup chopped red onion
  • 2 tsp dried oregano
  • 2 tsp paprika
  • Salt and pepper to taste

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, paprika, salt, and pepper to create the marinade.
  2. Coat chicken breasts in the marinade, cover, and refrigerate for at least 30 minutes or overnight for best flavor.
  3. Preheat grill or skillet over medium heat. Cook marinated chicken for 6-8 minutes on each side until golden brown and cooked through.
  4. Let the chicken rest for a few minutes before slicing into strips. Meanwhile, chop tomatoes, cucumbers, and red onion.
  5. Warm pitas briefly in a dry pan. Fill each pita with sliced chicken and fresh veggies. Drizzle with Greek yogurt sauce.
  6. Serve immediately with extra sauce on the side.
