  • 2 lbs russet potatoes
  • 3 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 cup shredded cheddar cheese
  • ¼ cup chopped green onions
  • ½ cup crispy bacon bits
  • ½ cup sour cream

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Boil whole russet potatoes in salted water until fork-tender (15-20 minutes). Drain and let cool slightly.
  3. Smash each potato on the baking sheet until about half an inch thick.
  4. Drizzle with olive oil and season with salt and pepper; toss to coat.
  5. Bake for 25-30 minutes until golden brown and crispy.
  6. Top with cheese and bacon bits; return to the oven for an additional 5-7 minutes until cheese is melted.
  7. Serve hot, garnished with green onions and sour cream.
