Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 large egg, beaten
  • 2 cups fresh strawberries, mashed
  • 1 tbsp lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking pan or line it with parchment paper.
  2. In a bowl, combine flour, sugar, baking powder, and salt. Cut in cold butter until crumbly. Reserve some crumbs for topping later.
  3. Mix in the beaten egg until just combined.
  4. In another bowl, mash strawberries with sugar and lemon juice until chunky.
  5. Press two-thirds of the crust mixture into the pan's bottom. Spread strawberry filling over it and sprinkle remaining crumbs on top.
  6. Bake for 30-35 minutes until golden brown. Cool completely before slicing.
