  • ¾ cup granulated sugar
  • ½ tsp salt
  • 2 large eggs (room temperature)
  • ½ cup whole milk
  • Zest and juice of 1 large lemon
  • 1 cup fresh raspberries

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a muffin tin with liners or grease it.
  2. In a large bowl, whisk together flour, baking powder, sugar, and salt.
  3. In another bowl, mix eggs, milk, lemon juice, and lemon zest until smooth.
  4. Combine wet ingredients into dry ingredients and stir gently until just mixed.
  5. Fold in raspberries carefully to maintain their shape.
  6. Fill muffin tins about two-thirds full and bake for 20-25 minutes until golden brown.
  7. Cool in the pan for 5 minutes before transferring to a rack.
