  • ¼ cup lemon juice (freshly squeezed)
  • 1 cup fresh blueberries

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, mix melted butter, milk, egg, lemon zest, and lemon juice until smooth.
  4. Pour the wet ingredients into the dry ingredients and gently fold until just combined.
  5. Carefully fold in the blueberries without mashing them.
  6. Spoon the batter into the muffin tin and bake for 18-22 minutes or until golden brown and a toothpick comes out clean.
