- 4 tbsp unsalted butter
- 1/2 cup light brown sugar
- 1 tsp ground cinnamon
- 1 cup toasted pecans, coarsely chopped
- 1 cup mini marshmallows
Instructions
- Prepare the sweet potatoes by peeling and chopping them into even pieces.
- Add the sweet potatoes to the Instant Pot along with 1 cup of water. Secure the lid.
- Set the Instant Pot to high pressure for 10 minutes. Allow natural release for 5 minutes before opening.
- Drain excess water and mash the sweet potatoes until smooth. Stir in butter, brown sugar, cinnamon, and salt until well combined.
- In a separate bowl, mix chopped pecans with melted butter and remaining brown sugar for topping.
- Spread the mashed sweet potato mixture in an oven-safe dish. Top with pecan mixture and mini marshmallows.
- Set the Instant Pot on ‘Sauté’ mode and cook until marshmallows are golden brown (about 5-7 minutes).
