  • 4 cloves fresh garlic, minced
  • 2 bell peppers, sliced (1 red, 1 yellow)
  • 8 oz cremini mushrooms, sliced
  • 28 oz canned diced tomatoes
  • 2 tsp Italian seasoning
  • 1 cup low-sodium chicken broth
  • 2 tbsp extra virgin olive oil
  • ½ cup red wine
  • Salt and pepper to taste

Instructions

  1. Set your Instant Pot to sauté mode. Heat olive oil until shimmering, then add minced garlic and onions; sauté until fragrant.
  2. Season chicken breasts with salt and pepper; add to the pot. Layer sliced bell peppers and mushrooms on top.
  3. Pour in diced tomatoes, chicken broth, red wine, and Italian seasoning. Stir gently.
  4. Secure the lid and set to manual high pressure for 10 minutes.
