  • 4 cups low-sodium vegetable broth

  • 1 tablespoon sweet or smoked paprika
  • 1/4 cup all-purpose flour
  • 2 tablespoons olive oil
  • Juice of 1 lemon (about 1 tablespoon)

Instructions

  1. Clean and slice the mushrooms into thick pieces. Finely chop the onion and mince the garlic.
  2. In a large pot, heat olive oil over medium heat. Add onions and sauté until translucent.
  3. Add mushrooms and cook until they soften. Stir in minced garlic, paprika, and dill; cook for an additional minute.
  4. Sprinkle flour over the mixture, stirring continuously for about two minutes to eliminate the raw flour taste.
  5. Gradually add vegetable broth while stirring to avoid lumps. Bring to a simmer for 15-20 minutes.
  6. Remove from heat and stir in sour cream and lemon juice until fully incorporated.
