- 2 medium sweet potatoes (about 400g)
- 4 cups mixed greens (arugula and spinach)
- 3 tbsp raw honey
- 2 tbsp extra virgin olive oil
- 1 cup strawberries, sliced or 1 medium apple, diced
- ¼ cup pecans or walnuts (optional), toasted
- ½ cup feta cheese (optional), crumbled
- Salt and pepper to taste
Instructions
- Preheat oven to 425°F (220°C). Dice sweet potatoes into even cubes and toss them in olive oil, salt, and pepper. Spread on a baking sheet.
- Roast sweet potatoes for 25-30 minutes until golden brown and tender.
- In a small bowl, whisk together honey, olive oil, salt, and pepper for the dressing.
- In a large bowl, combine mixed greens with sliced strawberries or diced apples. Drizzle some honey dressing over them.
- Once the sweet potatoes have cooled slightly, add them to the greens and fruits.
- Top with crumbled feta cheese and toasted nuts if desired. Drizzle more honey dressing before serving.
