  • 2 medium sweet potatoes (about 400g)
  • 4 cups mixed greens (arugula and spinach)
  • 3 tbsp raw honey
  • 2 tbsp extra virgin olive oil
  • 1 cup strawberries, sliced or 1 medium apple, diced
  • ¼ cup pecans or walnuts (optional), toasted
  • ½ cup feta cheese (optional), crumbled
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C). Dice sweet potatoes into even cubes and toss them in olive oil, salt, and pepper. Spread on a baking sheet.
  2. Roast sweet potatoes for 25-30 minutes until golden brown and tender.
  3. In a small bowl, whisk together honey, olive oil, salt, and pepper for the dressing.
  4. In a large bowl, combine mixed greens with sliced strawberries or diced apples. Drizzle some honey dressing over them.
  5. Once the sweet potatoes have cooled slightly, add them to the greens and fruits.
  6. Top with crumbled feta cheese and toasted nuts if desired. Drizzle more honey dressing before serving.
