Ingredients

Scale
  • 1 lb lean ground beef
  • 1 cup breadcrumbs (plain or Italian-seasoned)
  • 4 cloves fresh garlic, minced
  • 1/3 cup honey
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 1/4 cup low-sodium soy sauce
  • 2 green onions, chopped for garnish

Instructions

  1. 1. Preheat your oven to 375°F (190°C).
  2. 2. In a large bowl, combine ground beef, breadcrumbs, minced garlic, salt, and pepper. Mix gently until just combined.
  3. 3. Shape the mixture into golf ball-sized meatballs (about 1 inch in diameter) and place on a parchment-lined baking sheet.
  4. 4. In another bowl, whisk together honey, soy sauce, and chicken broth until smooth.
  5. 5. Spread uncooked rice evenly in a greased baking dish. Pour half of the sauce over the rice and arrange meatballs on top. Drizzle remaining sauce over everything.
  6. 6. Cover with foil and bake for about 40 minutes. Remove foil for the last 10 minutes to brown the meatballs.
