  • 2 tsp active dry yeast
  • 1 ½ cups warm water (110°F/43°C)
  • 2 tbsp ground cinnamon
  • 1 cup raisins (soaked in warm water)
  • 2 tbsp sugar
  • 1 tsp salt
  • 1 tbsp baking soda
  • Egg wash (optional)

Instructions

  1. Activate the yeast: Mix warm water, sugar, and yeast in a bowl. Let it sit for about 5 minutes until foamy.
  2. Make the dough: In a large bowl, combine flour, salt, cinnamon, and the activated yeast mixture. Stir until you form a shaggy dough.
  3. Knead: Transfer the dough to a floured surface and knead for 8-10 minutes until smooth and elastic.
  4. Let rise: Place the dough in an oiled bowl, cover, and let it rise in a warm place for about 1 hour or until doubled in size.
  5. Shape bagels: Punch down the dough, divide it into eight pieces, roll each into a ball, and poke a hole through the center to form bagels.
  6. Boil & bake: Boil water mixed with baking soda in a large pot. Boil each bagel for 1-2 minutes on each side before placing on a parchment-lined baking sheet. Brush with egg wash if desired and bake at 425°F (220°C) for about 20 minutes or until golden brown.
