  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 1 cup salsa verde
  • 1 cup pepper jack cheese, shredded
  • 2 tbsp olive oil
  • 2 tbsp fresh lime juice
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine salsa verde, lime juice, olive oil, garlic powder, salt, and pepper. Add chicken breasts and coat well. Marinate for at least 30 minutes.
  2. Preheat grill to medium-high heat (375°F).
  3. Grill marinated chicken for 6-7 minutes on each side until the internal temperature reaches 165°F.
  4. Top each breast with shredded pepper jack cheese and close the grill lid for about 2 minutes until melted.
  5. Remove from grill and let rest for a few minutes before slicing. Serve with extra salsa verde on top or alongside.
