  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1/3 cup chopped pepperoncini peppers
  • 1/2 cup unsalted butter, melted
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Juice of 1 lemon
  • 2 tbsp chopped fresh parsley for garnish
  • 2 tbsp reserved pepperoncini juice

Instructions

  1. Rinse chicken breasts under cold water and pat dry.
  2. In a bowl, whisk together melted butter, garlic, chopped pepperoncini, pepperoncini juice, lemon juice, salt, and pepper.
  3. Marinate chicken in the mixture for at least 30 minutes in the refrigerator.
  4. Preheat grill to medium-high heat (375°F).
  5. Lightly oil grill grates and place marinated chicken on the grill.
  6. Grill for 5-7 minutes per side until internal temperature reaches 165°F.
  7. Remove from grill and let rest for 5 minutes before serving.
  8. Drizzle with extra garlic butter and garnish with parsley.
