- 1 Granny Smith apple (peeled and diced)

- 1/4 cup honey or maple syrup
- 1 tsp vanilla extract
- Pinch of salt
Instructions

- In a large bowl, whisk together Greek yogurt, eggs, honey or maple syrup, and vanilla extract until smooth.
- In another bowl, sift together flour, baking powder, cinnamon, and salt. Gradually fold into the wet ingredients until just combined.
- Gently fold in blueberries and diced apple.
- Pour batter into the prepared loaf pan and spread evenly.
- Bake for 60 minutes or until golden brown and a toothpick inserted comes out clean.
- Let cool slightly in the pan before transferring to a wire rack to cool completely.
