  • 1 cup all-purpose flour
  • 1 cup fresh blueberries
  • 1 Granny Smith apple (peeled and diced)
  • 2 large eggs (room temperature)
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a loaf pan.
  2. In a large bowl, whisk together Greek yogurt, eggs, honey or maple syrup, and vanilla extract until smooth.
  3. In another bowl, sift together flour, baking powder, cinnamon, and salt. Gradually fold into the wet ingredients until just combined.
  4. Gently fold in blueberries and diced apple.
  5. Pour batter into the prepared loaf pan and spread evenly.
  6. Bake for 60 minutes or until golden brown and a toothpick inserted comes out clean.
  7. Let cool slightly in the pan before transferring to a wire rack to cool completely.
