  • 1 lb ground lamb or beef
  • 1/4 cup fresh parsley, chopped
  • 3 garlic cloves, minced
  • 1 small red onion, finely diced
  • 1/2 cup panko breadcrumbs
  • 1/2 cup tzatziki sauce
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, sliced
  • 2 tbsp lemon juice
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine ground lamb or beef with parsley, garlic, onion, panko breadcrumbs, salt, pepper, and lemon juice. Mix until just combined.
  3. Roll the mixture into golf ball-sized meatballs and place them on an oiled baking sheet an inch apart.
  4. Bake for 20-25 minutes until golden brown.
  5. While baking, prepare tzatziki by mixing yogurt with grated cucumber (drained), garlic, lemon juice, dill/mint, salt, and pepper.
  6. Assemble your bowl by layering tzatziki at the base, followed by cucumber slices and cherry tomatoes topped with meatballs.
  7. Drizzle with olive oil before serving.
