  • 1 cup coconut milk
  • 1/2 cup creamy peanut butter
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp fresh lime juice
  • 1/2 tsp red pepper flakes (optional)
  • 2 green onions, chopped for garnish

Instructions

  1. Marinate chicken thighs in a mixture of soy sauce, lime juice, minced ginger, and red pepper flakes for at least 30 minutes.
  2. Rinse 1 cup jasmine rice under cold water. Combine with coconut milk in a saucepan and bring to a boil. Reduce heat to low, cover, and simmer until rice is cooked.
  3. Heat oil in a skillet over medium-high heat. Sear marinated chicken thighs for about 5-7 minutes on each side until golden brown.
  4. In a bowl, mix peanut butter with reserved marinade and some water until smooth. Pour over seared chicken in the skillet.
  5. Simmer for an additional 10 minutes until the sauce thickens and the chicken is fully cooked.
  6. Fluff coconut rice and serve topped with ginger peanut chicken and garnished with green onions.
