  • 2 cups fresh spinach
  • 3 cloves minced garlic
  • 1 cup ricotta cheese
  • 1.5 cups shredded mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 475°F (245°C).
  2. Roll out pizza dough on a floured surface and pre-bake for 5 minutes.
  3. In a skillet, heat 1 tbsp olive oil over medium heat, sauté garlic until fragrant (30 seconds), then add spinach until wilted.
  4. Mix ricotta cheese with salt, pepper, and remaining olive oil until smooth.
  5. Spread ricotta mixture on the pre-baked dough, top with sautéed spinach, and sprinkle mozzarella evenly.
  6. Bake for 12-15 minutes or until golden brown and bubbly.
  7. Remove from oven, garnish with Parmesan, cool slightly, slice, and serve.
