- 12 jumbo pasta shells
- 3 boneless, skinless chicken breasts (about 1 lb)
- 2 cups fresh spinach
- 4 garlic cloves, minced
- 15 oz ricotta cheese
- 2 cups marinara sauce
- 1 cup shredded mozzarella cheese
- ¼ cup freshly grated parmesan cheese
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Boil water in a large pot and cook the jumbo pasta shells until al dente. Drain carefully.
- In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant. Add diced chicken, season with salt and pepper, and cook until done. Stir in fresh spinach until wilted.
- In a bowl, mix sautéed chicken and spinach with ricotta cheese, Italian seasoning, and half of the mozzarella until creamy.
- Fill each cooked shell generously with the chicken-spinach mixture.
- Spread half of the marinara sauce in a baking dish, place stuffed shells seam-side up on top, then pour remaining sauce over them. Top with remaining mozzarella and parmesan.
- Cover with foil and bake for about 25 minutes; remove foil for an additional 10 minutes to melt cheese.
