  • 1 cup plain full-fat yogurt
  • 4 cloves fresh garlic, minced
  • 1 tbsp fresh ginger, minced
  • 1 cup canned tomato puree
  • 1 cup coconut milk or heavy cream
  • 2 tsp cumin
  • 2 tsp coriander
  • 1 tsp garam masala
  • 1 tsp turmeric
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large bowl, mix yogurt with garlic, ginger, turmeric, cumin, coriander, salt, and pepper until smooth. Add chicken pieces and coat thoroughly. Cover and marinate for at least one hour (or overnight).
  2. Heat oil in a large skillet over medium heat. Sauté onions until golden brown; add garam masala.
  3. Stir in tomato puree and salt; simmer on low heat for about 10 minutes.
  4. Add marinated chicken with any leftover marinade; cook until fully cooked (about 15 minutes).
  5. Stir in coconut milk or cream; simmer for an additional few minutes until heated through.
  6. Serve hot over rice or with naan and garnish with fresh cilantro.
