  • 8 oz lo mein noodles
  • 1 cup bell peppers (assorted colors), sliced
  • 1 cup carrots, julienned
  • 2 green onions, sliced (whites and greens separated)
  • 3 cloves garlic, minced
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp chili garlic sauce (adjust to taste)
  • 1 cup protein of choice (tofu, chicken, or shrimp), marinated

Instructions

  1. Cook the lo mein noodles according to package instructions until tender yet slightly firm. Drain and rinse under cold water.
  2. While the noodles cook, chop bell peppers, julienne carrots, slice green onions (separating whites from greens), and mince garlic.
  3. In a large skillet or wok over medium-high heat, add sesame oil. Sauté minced garlic and white parts of green onions for about 30 seconds.
  4. Add bell peppers and carrots; stir-fry for 3-4 minutes until tender yet crunchy.
  5. Incorporate cooked noodles along with soy sauce and chili garlic sauce; toss until well-coated.
  6. Remove from heat, plate, and top with green onion greens before serving hot.
