  • 34 boneless, skinless chicken breasts (1.52 lbs)
  • 2 red bell peppers, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium sweet onion, chopped
  • 45 garlic cloves, minced
  • 2 tsp Italian seasoning
  • 1 (28 oz) can crushed tomatoes
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)

Instructions

  1. Wash and slice the bell peppers into strips. Chop the onion and mince the garlic.
  2. Optional: Sear chicken breasts in olive oil over medium heat until golden brown.
  3. Place chicken in the crockpot. Layer sliced peppers, onions, minced garlic, crushed tomatoes, and sprinkle Italian seasoning on top.
  4. Cover and cook on low for 6-7 hours until chicken is tender enough to shred.
