  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1/2 cup unsalted butter
  • 1 can (13.5 oz) full-fat coconut milk
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1 cup tomato puree
  • 2 tbsp curry powder
  • Salt and pepper to taste
  • Juice of 1 lime

Instructions

  1. Trim excess fat from chicken breasts and cut into bite-sized pieces.
  2. In a small pan, melt butter over medium heat and sauté garlic and ginger until fragrant (about 1 minute).
  3. Add chicken to the crockpot; pour in coconut milk, tomato puree, curry powder, salt, pepper, and lime juice.
  4. Cover and cook on low for 6-8 hours until the chicken is easily shred with forks.
  5. Stir before serving; adjust seasoning as desired.
