  • 1 lb boneless, skinless chicken thighs
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 3 green onions, finely chopped
  • 1/2 cup granulated sugar
  • 1/4 cup ketchup
  • 1/4 cup rice vinegar
  • 2 tbsp low-sodium soy sauce
  • 1 tsp garlic powder
  • 1 tbsp cornstarch mixed with 2 tbsp water

Instructions

  1. Cut chicken thighs into bite-sized pieces.
  2. In a bowl, whisk together flour, eggs, and a pinch of salt until smooth.
  3. Dip chicken pieces in the batter, then roll in panko breadcrumbs.
  4. Heat oil in a deep skillet to 350°F (175°C).
  5. Fry chicken balls in batches for about 4-5 minutes until golden brown.
  6. For the sauce, combine sugar, ketchup, vinegar, soy sauce, garlic powder, and cornstarch mixture in a saucepan over medium heat. Stir until thickened.
  7. Drain fried chicken on paper towels and toss in the warm sweet and sour sauce.
  8. Garnish with chopped green onions before serving.
