  • 8 oz cream cheese (softened)
  • 1 cup granulated sugar
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 2 large eggs (room temperature)
  • 1/2 cup unsalted butter (melted)
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 tsp cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. In another bowl, mix softened cream cheese with half of the sugar and vanilla until creamy.
  4. Combine mashed bananas, eggs, and melted butter in a large bowl; stir well.
  5. Sift together flour, baking soda, salt, and optional cinnamon; fold into the banana mixture gently.
  6. Pour half of the batter into the prepared pan; layer with cream cheese filling, then top with remaining batter. Swirl gently.
  7. Bake for about 60 minutes or until a toothpick comes out clean from the center. Allow to cool before slicing.
