Ingredients

  • 2 cups heavy cream
  • 1 cup brewed strong coffee (cooled)
  • 3/4 cup granulated sugar (divided)
  • 5 large egg yolks
  • 1 tsp pure vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Brew and cool one cup of strong coffee.
  3. In a saucepan, combine heavy cream and half of the sugar over medium heat until dissolved.
  4. Whisk egg yolks with remaining sugar until pale and thickened.
  5. Gradually add the warm cream mixture to the egg yolks while whisking to temper.
  6. Strain the mixture through a fine sieve into another bowl.
  7. Pour custard into ramekins placed in a baking dish filled halfway with hot water.
  8. Bake for 30-35 minutes until set but slightly jiggly in the center.
  9. Cool at room temperature before refrigerating for at least two hours.
  10. Caramelize sugar topping using a kitchen torch or broiler before serving.
