- 1 tsp baking soda
- 2 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a loaf pan by greasing it or lining it with parchment paper.
- In a large bowl, mash the ripe bananas until creamy with some lumps remaining.
- In another bowl, mix melted butter with granulated sugar and brown sugar until combined. Add eggs one at a time, mixing well after each addition.
- Gradually add the mashed bananas to the mixture, blending well.
- In a separate bowl, whisk together flour, baking soda, cinnamon, and salt. Fold the dry ingredients into the wet mixture gently until just combined.
- For the cinnamon swirl, mix together equal parts of sugar and cinnamon in a small bowl.
- Pour half of the batter into the prepared loaf pan; sprinkle half of the cinnamon-sugar mixture over it. Layer with the remaining batter and top with the rest of the swirl mixture.
- Bake for 60-65 minutes or until golden brown on top and a toothpick inserted into the center comes out clean.
