  • 3 ripe bananas (about 1 cup mashed)
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs (room temperature)
  • 1/3 cup unsalted butter (melted)
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan by greasing it or lining it with parchment paper.
  2. In a large bowl, mash the ripe bananas until creamy with some lumps remaining.
  3. In another bowl, mix melted butter with granulated sugar and brown sugar until combined. Add eggs one at a time, mixing well after each addition.
  4. Gradually add the mashed bananas to the mixture, blending well.
  5. In a separate bowl, whisk together flour, baking soda, cinnamon, and salt. Fold the dry ingredients into the wet mixture gently until just combined.
  6. For the cinnamon swirl, mix together equal parts of sugar and cinnamon in a small bowl.
  7. Pour half of the batter into the prepared loaf pan; sprinkle half of the cinnamon-sugar mixture over it. Layer with the remaining batter and top with the rest of the swirl mixture.
  8. Bake for 60-65 minutes or until golden brown on top and a toothpick inserted into the center comes out clean.
  9. Allow cooling before slicing.
