  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • 2 tsp ground cinnamon
  • 1 tsp baking soda
  • 1 large egg, room temperature
  • ½ cup melted butter
  • 1 tsp vanilla extract
  • ½ tsp salt

Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mash the ripe bananas until smooth.
  3. Mix in melted butter, sugar, eggs, and vanilla extract until well combined.
  4. In another bowl, whisk together flour, baking soda, salt, and cinnamon.
  5. Gradually combine dry ingredients with wet ingredients; fold gently to avoid overmixing.
  6. Pour half the batter into the loaf pan, sprinkle with half the cinnamon-sugar mixture, layer remaining batter on top, and finish with more cinnamon-sugar.
  7. Bake for 60-70 minutes or until a toothpick comes out clean.
  8. Allow cooling for 10 minutes before transferring to wire rack.
