  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 cup powdered sugar (for dusting)
  • 1 tsp almond extract
  • 1/2 cup raspberry jam
  • 1 egg yolk
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C). In a large bowl, cream together softened butter and granulated sugar until light and fluffy.
  2. Gradually mix in flour, salt, and almond extract until just combined.
  3. Wrap dough in plastic wrap and refrigerate for at least one hour to firm up.
  4. Roll out chilled dough on a floured surface to about 1/4 inch thick. Cut out tree shapes and cut smaller shapes from half of them for the jam filling.
  5. Place cutouts on parchment-lined baking sheets and bake for 10-12 minutes or until edges are lightly golden.
  6. Once cooled, spread raspberry jam on solid cookies and top with cut-out pieces. Dust with powdered sugar before serving.
