  • 1 lb large shrimp, peeled and deveined
  • 1 cup fresh parsley, chopped
  • 4 cloves garlic, minced
  • 3 tbsp red wine vinegar
  • 1/2 cup extra virgin olive oil
  • 1 tbsp lemon juice
  • 1/2 tsp red pepper flakes (adjust to taste)
  • Salt and pepper to taste

Instructions

  1. Rinse the shrimp under cold water and pat dry.
  2. In a food processor, blend parsley, garlic, red wine vinegar, olive oil, lemon juice, red pepper flakes, salt, and pepper until smooth.
  3. Marinate the shrimp in half of the chimichurri sauce for at least 15 minutes.
  4. Preheat the grill or skillet over medium-high heat.
  5. Cook the marinated shrimp for 2-3 minutes on each side until pink and opaque.
  6. Serve on a platter drizzled with remaining chimichurri sauce.
