  • 1 cup orzo pasta
  • 2 cups fresh broccoli florets
  • 3 cups low-sodium chicken broth
  • 1 cup freshly grated Parmesan cheese
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the diced onion and minced garlic; sauté until translucent (about 3 minutes).
  2. Add the sliced chicken sausage; cook until golden brown (about 5 minutes).
  3. Stir in the uncooked orzo and pour in the chicken broth. Bring to a simmer, cover, and cook for about 10 minutes until orzo absorbs most of the liquid.
  4. In the last five minutes of cooking, add the broccoli florets; stir to combine.
  5. Remove from heat and mix in the grated Parmesan cheese until melted. Season with salt and pepper before serving.
