  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cloves fresh garlic, minced
  • 2 ripe avocados, sliced
  • 4 large flour tortillas
  • 1 cup salsa (fresh pico de gallo or store-bought)
  • 1 cup shredded Mexican cheese blend
  • 1 cup crisp lettuce, shredded
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Juice of 1 lime

Instructions

  1. Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat until shimmering.
  2. Add the chicken to the skillet and cook for about 6-7 minutes on each side until golden brown and fully cooked (internal temperature should reach 165°F).
  3. In the last minute of cooking, add minced garlic and sauté until fragrant.
  4. Remove from heat, shred chicken using two forks, and mix in lime juice.
  5. Lay out tortillas and fill each with shredded chicken, avocado slices, salsa, lettuce, and cheese. Fold ends in and roll tightly.
  6. For an optional crispy finish, sear each burrito seam-side down in the skillet for about 2 minutes on each side until golden brown.
  7. Serve warm with extra salsa or sour cream.
