  • 1 lb lean ground beef
  • 4 cups thinly sliced Russet potatoes
  • 1 medium sweet onion, diced
  • 1 green bell pepper, diced
  • 2 cups shredded provolone or cheddar cheese
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet over medium heat, heat olive oil. Sauté diced onions and green bell peppers until soft.
  3. Add ground beef to the skillet, cooking until browned; season with salt, pepper, and garlic powder.
  4. Layer half of the sliced potatoes in a greased baking dish, followed by half of the beef mixture and half of the cheese.
  5. Repeat layering with remaining potatoes, beef mixture, and top with remaining cheese.
  6. Cover with aluminum foil and bake for 45 minutes. Remove foil during the last 15 minutes for a bubbly cheese finish.
