Ingredients

  • 4 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup shredded sharp cheddar cheese
  • 2 tbsp fresh thyme or rosemary, chopped
  • 1 ½ cups buttermilk

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking soda, and salt until smooth.
  3. Gently fold in cheddar cheese and fresh herbs.
  4. In another bowl, mix buttermilk until well combined. Add to the dry ingredients; stir until the mixture forms a thick, slightly sticky dough.
  5. Turn dough onto a floured surface and knead gently just until combined (about five times). Shape into a round loaf.
  6. Place loaf on the prepared baking sheet and cut an 'X' on top for rising. Bake for about 30 minutes or until golden brown and sounds hollow when tapped.
  7. Allow to cool slightly before slicing and serving.
