- 2 cups cherry tomatoes

- 8 oz fettuccine or penne pasta
- 2 tbsp extra virgin olive oil
- ½ cup freshly grated Parmesan cheese
- Salt and pepper to taste
- ½ tsp red pepper flakes (optional)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and spread out cherry tomatoes.
- Drizzle tomatoes with olive oil, sprinkle with salt and pepper, and roast for about 20 minutes until charred.
- In a large skillet over medium-high heat, add olive oil. Season chicken with salt and pepper; cook until golden brown on both sides (5-7 minutes per side) or cooked through.

- Cook pasta according to package instructions. Combine cooked pasta, roasted tomatoes, and chicken in the skillet; toss gently.
