  • 4 cloves fresh garlic, minced
  • 2 cups cherry tomatoes
  • 1 cup fresh basil leaves, chopped
  • 8 oz fettuccine or penne pasta
  • 2 tbsp extra virgin olive oil
  • ½ cup freshly grated Parmesan cheese
  • Salt and pepper to taste
  • ½ tsp red pepper flakes (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and spread out cherry tomatoes.
  2. Drizzle tomatoes with olive oil, sprinkle with salt and pepper, and roast for about 20 minutes until charred.
  3. In a large skillet over medium-high heat, add olive oil. Season chicken with salt and pepper; cook until golden brown on both sides (5-7 minutes per side) or cooked through.
  4. Add minced garlic and chopped basil to the skillet; sauté until fragrant (about 1 minute).
  5. Cook pasta according to package instructions. Combine cooked pasta, roasted tomatoes, and chicken in the skillet; toss gently.
  6. Top with freshly grated Parmesan before serving. Add red pepper flakes for heat if desired.
