- 1 medium head of cauliflower (about 4 cups riced)
- 1 cup shredded whole milk mozzarella cheese
- 1 cup sliced pepperoni
- 2 large eggs (room temperature)
- 1 tsp Italian seasoning
- ½ cup grated Parmesan cheese
- ½ tsp salt
- ¼ tsp black pepper
- ½ cup pizza sauce (low-sugar)
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Steam cauliflower florets until tender, about 6-8 minutes. Transfer to a food processor and pulse until finely chopped.
- Place processed cauliflower in a clean kitchen towel and squeeze out excess moisture.
- In a bowl, combine drained cauliflower with eggs, mozzarella, Parmesan, Italian seasoning, salt, and pepper. Mix well.
- Spread the mixture onto the prepared baking sheet into a pizza shape, about ½ inch thick. Bake for 25-30 minutes until golden brown.
- Remove from oven, spread pizza sauce over the crust, top with mozzarella and pepperoni slices, then return to oven at 400°F (200°C) for an additional 10-15 minutes until cheese is melted and bubbly.
