  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Clean leeks thoroughly and slice them thinly. Chop mushrooms into bite-sized pieces.
  2. In a large skillet over medium heat, add olive oil and sauté leeks until golden brown (10-15 minutes).
  3. Add chopped mushrooms and minced garlic to the skillet; sauté until mushrooms are tender (5-7 minutes).
  4. Pour in heavy cream, stirring gently, and simmer for about 3 minutes until slightly thickened.
  5. Cook pasta according to package instructions until al dente; drain while reserving some pasta water.
  6. Combine drained pasta with the creamy leek-mushroom sauce in the skillet, adding grated Gruyere cheese until melted. Use reserved pasta water if needed for creaminess.
  7. Serve hot, garnished with extra cheese or cracked pepper.
