  • 8 oz short pasta (rotini or penne)
  • 1 cup cherry tomatoes, halved
  • 8 oz fresh mozzarella balls
  • 1 cup fresh basil leaves, torn
  • 3 tbsp balsamic vinegar
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. 1. Cook the pasta in salted boiling water until al dente. Drain and rinse under cold water.
  2. 2. In a large bowl, combine the halved cherry tomatoes and torn basil leaves.
  3. 3. Add the mozzarella balls to the bowl with the veggies.
  4. 4. In a separate small bowl, whisk together balsamic vinegar, olive oil, salt, and pepper.
  5. 5. Pour the dressing over the cooled pasta and mix gently until everything is well coated. Let it sit for 10 minutes before serving.
