- 1 tbsp fresh thyme, chopped
- 1 sheet puff pastry (thawed)
- 1 cup ricotta cheese (whole milk)
- 1/2 cup fresh Parmesan cheese, grated
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Toss cubed butternut squash with olive oil, salt, pepper, and thyme; spread on a baking sheet and roast for about 25 minutes until tender.
- Sauté sliced mushrooms in olive oil over medium heat until golden brown (5-7 minutes).
- In a bowl, combine roasted squash, sautéed mushrooms, ricotta cheese, salt, pepper, and optional thyme; mix gently.
- Roll out puff pastry on a lined baking sheet and cut slits along the edges for a border.
- Spoon filling into the center of the pastry shell; fold edges slightly over filling. Sprinkle grated Parmesan on top.
- Bake for 30-35 minutes until golden brown. Cool slightly before serving.
