Ingredients

  • 2 cups butternut squash, peeled and cubed
  • 1 cup cremini or shiitake mushrooms, sliced
  • 1 tbsp fresh thyme, chopped
  • 1 sheet puff pastry (thawed)
  • 1 cup ricotta cheese (whole milk)
  • 1/2 cup fresh Parmesan cheese, grated
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss cubed butternut squash with olive oil, salt, pepper, and thyme; spread on a baking sheet and roast for about 25 minutes until tender.
  3. Sauté sliced mushrooms in olive oil over medium heat until golden brown (5-7 minutes).
  4. In a bowl, combine roasted squash, sautéed mushrooms, ricotta cheese, salt, pepper, and optional thyme; mix gently.
  5. Roll out puff pastry on a lined baking sheet and cut slits along the edges for a border.
  6. Spoon filling into the center of the pastry shell; fold edges slightly over filling. Sprinkle grated Parmesan on top.
  7. Bake for 30-35 minutes until golden brown. Cool slightly before serving.
