  • 1 medium butternut squash (about 2 cups mashed)
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp salt
  • ½ tsp black pepper
  • Vegetable oil (for frying)

Instructions

  1. Preheat your oven to 400°F (200°C). Peel and cube the butternut squash, then roast on a baking sheet for about 25 minutes until tender.
  2. Mash the roasted squash in a mixing bowl until smooth.
  3. In another bowl, combine mashed squash with flour, eggs, baking powder, cinnamon, salt, and pepper. Mix until just blended.
  4. Heat enough oil in a skillet over medium heat to cover the bottom generously. Once shimmering, drop spoonfuls of batter into the hot oil.
  5. Fry each fritter for about 3-4 minutes per side until golden brown. Transfer to paper towels to drain excess oil.
  6. Serve hot with your favorite dipping sauce.
