- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1/2 cup buffalo sauce
- 8 oz provolone cheese
- 4 hoagie rolls
- 1 cup onions, sliced (about 1 medium onion)
- 1 cup bell peppers, sliced (about 1 medium pepper)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Gather all ingredients and slice onions and bell peppers. Rinse chicken breasts and pat dry.
- Heat olive oil in a skillet over medium heat. Add onions and bell peppers; cook until golden brown (5-7 minutes).
- Add chicken breasts to the skillet; season with salt and pepper. Cook until golden brown (6-8 minutes per side).
- Shred cooked chicken in the skillet using two forks. Pour buffalo sauce over shredded chicken; mix well.
- Reduce heat to low, place provolone slices over the mixture, cover for 2-3 minutes until melted.
- Fill hoagie rolls with buffalo chicken mixture and sautéed veggies. Serve warm.
