  • 2 cups ripe heirloom tomatoes, diced
  • 8 oz fresh mozzarella, torn into pieces
  • 1 cup fresh basil leaves, chopped
  • 3 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Slice the baguette or ciabatta into 1-inch thick pieces and arrange on a baking sheet. Brush each slice lightly with olive oil.
  2. Bake for 5-7 minutes until golden brown and crispy.
  3. While the bread is toasting, combine diced tomatoes, chopped basil, salt, pepper, and olive oil in a bowl. Let the mixture sit for flavors to meld.
