  • 1 can (15 oz) kidney beans, rinsed and drained
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 bell pepper, chopped
  • 2 cups beef broth
  • Salt and pepper to taste
  • Sour cream for serving

Instructions

  1. Prepare your ingredients by chopping the onion and bell pepper, and mincing the garlic.
  2. In a large pot over medium heat, add olive oil. Sauté onions and bell peppers until softened; stir in garlic until fragrant.
  3. Increase heat slightly, add ground beef, cooking until browned while breaking it apart.
  4. Mix in chili powder, cumin, salt, and pepper; stir well before adding crushed tomatoes and beef broth.
  5. Toss in drained kidney beans, bring to a boil, then reduce heat to low and simmer uncovered for about 30 minutes.
  6. Taste the chili and adjust seasoning if needed. Serve hot with sour cream on top.
