  • 8 oz creamy Brie cheese, cut into chunks
  • 2 medium Honeycrisp apples, diced
  • 2 cloves garlic, minced
  • 2 cups fresh spinach, sautéed
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • Balsamic glaze for drizzling

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place chicken breasts between plastic wrap and pound them until evenly thin.
  3. In a skillet, heat olive oil over medium heat; sauté garlic until fragrant. Add spinach and cook until wilted, then remove from heat.
  4. Fold in diced apples and Brie into the spinach mixture; season with salt and pepper.
  5. Lay each chicken breast flat, spoon stuffing onto one side, then fold over.

  7. Place stuffed chicken in a greased baking dish; bake for 25-30 minutes until golden brown and internal temperature reaches 165°F (75°C).
