  • 8 oz cooked lobster meat, chopped
  • 1 cup ricotta cheese (whole milk)
  • ½ cup grated Parmesan cheese
  • 1 tablespoon fresh basil, chopped
  • 1 tablespoon fresh parsley, chopped
  • Zest of 1 lemon
  • 12 ravioli wrappers (store-bought or homemade)
  • 3 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • ½ cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chopped lobster meat, ricotta cheese, grated Parmesan, fresh herbs, and lemon zest. Mix until smooth.
  2. Place dollops of filling on half of each ravioli wrapper. Fold over and seal tightly.
  3. Bring salted water to a gentle boil. Cook the ravioli for 3-4 minutes until they float.
  4. In a skillet over medium heat, melt butter and sauté minced garlic until fragrant.
  5. Stir in heavy cream and simmer for about 5 minutes until slightly thickened.
  6. Gently transfer cooked ravioli to the skillet and toss in the sauce before serving warm.
