Ingredients

Scale
  • 1 sheet puff pastry (about 250g), thawed
  • 1 cup fresh raspberries
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 400°F (200°C). Roll out the thawed puff pastry on a floured surface to about 1/8 inch thick and cut it into rectangles.
  2. Place the pastry rectangles on a parchment-lined baking sheet and bake for 15-20 minutes until golden brown and puffed. Let cool completely.
  3. In a mixing bowl, whip the heavy cream with powdered sugar until soft peaks form. Add vanilla extract and gently fold to combine.
  4. Assemble by placing one pastry rectangle on a plate, spreading whipped cream over it, and topping with fresh raspberries. Repeat layering until desired height is reached.
  5. Dust the top layer with powdered sugar, slice into portions, and serve immediately.
