  • 1/4 cup fresh parsley or dill (finely chopped)
  • 1/2 cup celery (finely chopped)
  • 1/4 cup red onion (finely chopped)
  • Juice of 1 lemon
  • Salt and pepper to taste
  • 1 package puff pastry sheets (2 sheets)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season chicken breasts with salt and pepper, bake for 25-30 minutes until cooked through.
  3. Shred the cooled chicken using two forks.
  4. In a bowl, mix shredded chicken, Greek yogurt, celery, red onion, herbs, lemon juice, salt, and pepper until well combined.
  5. Roll out puff pastry sheets on a floured surface and cut into squares; press into muffin tins.
  6. Fill each pastry cup with the chicken salad mixture and bake for 15-20 minutes until golden brown.
