  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 large eggs
  • 1 cup milk (whole or almond)
  • 1/2 cup vegetable oil (or melted coconut oil)
  • 1 1/2 cups mixed fresh berries (blueberries, raspberries, strawberries)
  • 1 tsp cinnamon
  • Zest of 1 lemon or orange

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
  3. In another bowl, beat the eggs with the milk and vegetable oil until smooth. Stir in the lemon zest.
  4. Gently fold the mixed berries into the wet mixture.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined—do not overmix!
  6. Spoon the batter into the muffin tin, filling each liner about two-thirds full.
  7. Bake for 15-20 minutes or until golden brown and a toothpick comes out clean.
  8. Allow cooling slightly before enjoying.
