Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with liners.
- In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
- In another bowl, beat the eggs with the milk and vegetable oil until smooth. Stir in the lemon zest.
- Gently fold the mixed berries into the wet mixture.
- Pour the wet ingredients into the dry ingredients and mix until just combined—do not overmix!
- Spoon the batter into the muffin tin, filling each liner about two-thirds full.
- Bake for 15-20 minutes or until golden brown and a toothpick comes out clean.
