  • 1 cup celery stalks, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the elbow macaroni in salted boiling water until al dente (7-9 minutes). Drain and cool.
  2. While the pasta cooks, prepare the jalapeños by removing seeds and dicing them finely.
  3. In a large bowl, mix mayonnaise, mustard, sour cream, lime juice, salt, and pepper until well blended.
  4. Add red onion, poblano peppers (if using), celery, and jalapeños to the dressing; mix well.
