Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 stalks fresh lemongrass, minced
  • 2 medium zucchinis, sliced
  • 1 cup jasmine rice
  • 4 garlic cloves, minced
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp honey
  • 2 tsp sesame oil
  • 1 inch fresh ginger, grated
  • 2 green onions, chopped (for garnish)

Instructions

  1. 1. Prepare your ingredients: Chop chicken into bite-sized pieces; mince garlic and ginger.
  2. 2. Create the marinade: In a bowl, combine soy sauce, honey, grated ginger, minced garlic, and minced lemongrass. Mix well and marinate chicken for at least 15 minutes.
  3. 3. Cook the chicken: Heat sesame oil in a large skillet over medium-high heat. Sauté marinated chicken for about 5-7 minutes until golden brown.
  4. 4. Add zucchini: Stir in sliced zucchini when the chicken is almost cooked through. Cook for an additional 3-4 minutes until zucchini is slightly tender but still crisp.
  5. 5. Cook jasmine rice: Prepare jasmine rice according to package instructions in a separate pot.
  6. 6. Serve: Plate jasmine rice first; top with the chicken and zucchini mixture. Garnish with chopped green onions before serving.
