  • 6 large collard greens
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup full-fat coconut milk
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 2 tablespoons curry powder (adjust to taste)
  • Juice of 1 lime
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Rinse collard greens and pat dry. Remove the thick stem from each leaf.
  2. Heat olive oil in a skillet over medium heat. Sauté diced onions until soft (about 5 minutes).
  3. Add minced garlic and grated ginger; cook for another minute until fragrant.
  4. Stir in chickpeas, curry powder, salt, and pepper until well combined.
  5. Pour in coconut milk, bring to a simmer, and cook for 10-15 minutes until slightly thickened.
  6. Spoon the chickpea mixture into each collard green leaf, fold sides in, and roll tightly like a burrito.
